The evolving history of Champagne parallels the progression of world-renowned artists such as Rembrandt, Hals, and Bruegel. These masters perfected their craft about the same time that Champagne became known as the wine of kings. The most esteemed sparkling wine of France began as a still wine made from grape varietals that are basically extinct today. The wine was cloudy, gritty, syrupy, and grey in color. It was also pretty sweet. Champagne evolved over the centuries - thanks to Dom Pérignon, various scientific discoveries, and other historical events - into the clear, dry, bubbly juice with a legally protected name that we know and love today.
